Consuming crabs that smell like ammonia may pose potential harm to the human body and thus should actually not be consumed. However, it is difficult to do so in a country that is absolutely crazy about crabs!
Why do most crabs at the market smell like Ammonia?
Crabs get stressed very easily. Ammonia is the byproduct of the decomposition of seafood. When crabs become stressed, they produce a lot of it and the smell is especially apparent before it is cooked. To combat this, most restaurants adopt recipes (such as chilli crabs) that are rich in smell and taste that would overwhelm the smell of ammonia.
How does the country of origin play a part?
Crabs from other countries other than Sri Lanka, be it wild catch or farmed, are very prone to decomposing quickly. They are generally smaller in size and therefore, are inevitably weaker in terms of endurance and strength. This does not allow them to survive the course of captivity well. It is common for such crabs to be sold in Singapore because of its economical cost.
Why are Sri Lankan Wild Catch Crabs better then?
It is almost impossible to replicate the natural habitat of a crab through a farm setting. A crab will definitely produce ammonia as a result of stress in captivity. There are simply too many factors to control that cannot even be maintained, such as the pH of the water.
Furthermore, farms breed crabs for profit and as a result, most of these crabs experience a sad case of overcrowding. Being creatures that enjoy their own space and being alone further adds to their stress. Hence, more production of ammonia.
Crabs are carnivorous by nature. It is unlikely that a farm can feed them what they need to eat, maintain the cleanliness of the water, and still remain profitable. Their desperate need for the crabs to grow quickly to a sellable size means that they unleash crazy amounts of protein into the water daily. A crab that does not have the ability to act on its natural instincts (which is to hunt) will ultimately find itself wallowing in greater distress.
This is the reason to why some of your crabs may appear to be big in size, but do not seem meaty at all. We make it a point to not sell you empty shells and give you maximum worth for every single cent you pay.

Why can’t other people acquire wild crabs too if they are that amazing?
Legal reasons: Going out to sea in a foreign country requires a good amount of legal work. Our established business is lucky to have clearance to engage fishermen to go out to international waters to net crabs.
Environmental reasons: Wild catch crabs are controlled. They are popular all around the World, and the last thing we would need is a shortage in natural supply!
Cost reasons: To acquire crabs through such means is way more expensive than farming them. Although we enjoy lesser profits, we believe that the model is still scalable, and more importantly, we feel great pride in quality of our crabs.
